Preparation

Heat oil in a pan over medium heat.

Add cumin seeds and let them crackle.

Add chopped onion and sauté until golden brown.

Add grated ginger, minced garlic, and green chili. Sauté for a minute.

Add chopped tomatoes and cook until soft.

Add turmeric powder, red chili powder, coriander powder, and garam masala powder. Mix well.

Add diced potatoes and salt. Stir to coat the potatoes with the spices.

Cook for 5-7 minutes, stirring occasionally, until the potatoes are slightly browned.

Reduce the heat to low and add yogurt. Mix well to combine.

Cover the pan and simmer for 10-12 minutes, or until the potatoes are cooked through and the curry thickens.
