Preparation

1. In a bowl, mix whisked yogurt and gram flour(besan). Add water gradually to make a smooth mixture.

2. Heat oil in a pan and add turmeric powder, red chili powder, and salt. Sauté for a minute.

3. Slowly add the yogurt and gram flour mixture to the pan while stirring continuously.

4. Let it simmer on low flame for 15-20 minutes, stirring occasionally. Adjust the consistency as desired by adding more water if needed.

5. In a separate bowl, mix gram flour, chopped onion, spinach, cilantro, red chili powder, carom seeds, and salt. Add water as needed to make a thick batter for pakoras.

6. Heat oil in a deep pan for frying. Drop small portions of the batter into hot oil and fry until golden brown and crispy.

7. Remove the pakoras from the oil and drain excess oil on a paper towel.

8. Add the pakoras to the prepared kadhi and let it cook for another 5 minutes.

9. Serve hot with steamed rice or roti.
