Preparation

Heat oil in a pan and add chopped onions. Saute until they turn golden brown.

Add minced ginger and garlic. Cook until the raw smell disappears.

Add chopped tomatoes and cook until they become mushy and oil separates.

Add slit green chilies, curry leaves, and all the spice powders (turmeric, red chili, coriander, cumin, and garam masala). Mix well and cook for a minute.

Add coconut milk and simmer the gravy for 5 minutes.

Add the paneer cubes and salt. Mix gently, ensuring the paneer is coated with the gravy. Cook for another 2-3 minutes to allow the flavors to blend.

Garnish with fresh coriander leaves and serve hot with roti, naan, or rice.
