Preparation

Heat oil in a pan or kadai over medium heat.

Add cumin seeds and let them splutter.

Add finely chopped onions and sauté until golden brown.

Add grated ginger, minced garlic, and green chili. Sauté for a minute.

Add finely chopped tomatoes and cook until they become soft and mushy.

Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well.

Add chopped vegetables (carrots, potatoes, green beans, cauliflower, and peas). Mix well to coat the vegetables with spices.

Add salt to taste and half a cup of water. Mix well.

Cover the pan and simmer for 15-20 minutes or until the vegetables are cooked and tender. Stir occasionally.

Sprinkle garam masala and garnish with freshly chopped coriander leaves.

Mix well and turn off the heat.
