Aloo Paratha is a popular Indian bread stuffed with mashed potatoes and spices.

Preparation

In a mixing bowl, combine the flour and water and knead it well to form a soft dough. Cover and let it rest for 15 minutes.

Heat a pan and add the boiled, mashed potatoes.

Add the chopped green chilies, grated ginger, turmeric powder, red chili powder, cumin powder, coriander leaves, and salt. Mix well.

Divide the dough into equal-sized balls and roll out each ball into a small circle.

Place a portion of the potato filling in the center of each circle.

Bring the edges of the circle together and seal the filling inside, forming a stuffed ball.

Roll out the stuffed ball gently into a round paratha, dusting with flour if needed.

Heat a tawa or griddle over medium heat and place the paratha on it.

Cook for a minute or until small bubbles start appearing on the surface.

Flip the paratha and brush some ghee or oil on top.

Cook for another minute or until both sides are golden brown and crispy.

Remove from the tawa and serve hot with yogurt, pickle, or chutney.
