Preparation

In a large pot, heat some oil over medium heat.

Add the chopped onion, minced garlic, and celery. Sauté until the onion turns translucent.

Add the diced chicken to the pot and cook until it changes color.

Add the sliced carrots, bay leaves, dried thyme, salt, and black pepper. Stir well.

Pour in the water and bring the soup to a boil.

Reduce the heat, cover the pot, and let it simmer for about 20-30 minutes or until the chicken is cooked through and the vegetables are tender.

Taste and adjust the seasoning if needed.
