Preparation

Heat oil in a pan over medium heat.

Add the chopped onions and sauté until golden brown.

Add ginger, garlic, green chilies, and curry leaves. Sauté for a minute.

Add the chopped tomatoes and cook until they become soft and mushy.

Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well.

Add the chicken pieces and mix until they are well coated with the spices.

Cover the pan and let the chicken cook on low heat for about 20-25 minutes or until it is tender and cooked through.

Once the chicken is cooked, increase the heat to medium and cook until the gravy thickens.

Garnish with fresh coriander leaves.
