Preparation

Heat mustard oil in a large heavy-bottomed pan.

Add the sliced onions and cook until golden brown.

Add the minced garlic and grated ginger. Cook for another 2-3 minutes.

Add the chopped tomatoes and green chilies. Cook until the tomatoes are soft and well cooked.

Add the turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well.

Add the mutton pieces and cook on high heat for 5 minutes, stirring continuously.

Reduce the heat to low, cover the pan, and cook for about 1-2 hours until the mutton is tender. Add water if needed.

Once the mutton is cooked, increase the heat to medium and cook uncovered until the gravy thickens.

Add the garam masala powder and sugar. Mix well and cook for another 5 minutes.

Garnish with fresh coriander leaves and serve hot with steamed rice or Indian bread.
