Preparation

Heat vegetable oil in a large pot over medium heat.

Add the chopped ginger, minced garlic, and green onions. Sauté for a minute.

Add the diced chicken and cook until it turns white and is no longer pink.

Pour in the chicken stock and bring it to a boil. Reduce the heat and let it simmer for 10 minutes.

Add the sweet corn kernels and continue to simmer for another 5 minutes.

Stir in the soy sauce, salt, and black pepper to taste.

Gradually pour the cornstarch mixture into the soup while stirring continuously to avoid lumps. Cook for a few more minutes until the soup thickens.

Remove the soup from heat and garnish with additional chopped green onions if desired.
