Preparation

Soak the red lentils in water for about 30 minutes. Drain and rinse.

Heat olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté for 5-6 minutes until the vegetables are slightly softened.

Add cumin powder, turmeric powder, paprika, salt, and black pepper to the pot. Stir well to coat the vegetables with the spices.

Add the soaked and rinsed red lentils to the pot along with vegetable broth. Bring to a boil.

Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the lentils are cooked and tender.

Using an immersion blender or a regular blender, blend the soup until you reach your desired consistency. If using a regular blender, blend in small batches and be cautious of hot liquids.

Return the blended soup to the pot. Stir in lemon juice and adjust the seasonings if needed.

Simmer the soup for an additional 5 minutes.
