Preparation

Heat butter in a large pot.

Add chopped onions, garlic, and ginger. Sauté until onions turn translucent.

Add the chopped carrots, beans, peas, and capsicum. Stir well.

Pour vegetable broth and water into the pot. Add salt and black pepper powder.

Cover and cook the vegetables on medium heat for 15-20 minutes or until they become tender.

Turn off the heat and let the soup cool down a bit.

Blend the cooked vegetables to a smooth consistency using a blender or immersion blender.

Return the blended soup to the pot and reheat gently.

Adjust the consistency by adding more water if needed.
