Preparation

Heat oil in a pot and add chopped onions. Sauté until onions turn translucent.

Add chopped carrots, cabbage, and capsicum. Cook for 2-3 minutes until vegetables are slightly tender.

Pour vegetable stock into the pot and bring to a boil.

Add corn kernels, chopped coriander leaves, salt, and black pepper powder. Stir well.

Simmer the soup for 10-15 minutes on low heat.

Remove from heat and let it cool slightly.

Blend the soup using a hand blender or in a countertop blender until smooth.
