Preparation

In a large mixing bowl, combine maida, turmeric powder, salt, and oil.

Gradually add water and knead to form a soft dough.

Cover the dough and let it rest for 30 minutes.

In another bowl, mix powdered sugar and cardamom powder to make the filling.

Divide the dough into equal-sized balls.

Dust the work surface with flour and roll out each ball into a small circle.

Spread a spoonful of the filling mixture onto the rolled dough, leaving some space around the edges.

Fold the edges to seal the filling inside and roll out the stuffed dough into a slightly thicker circle.

Heat a tawa or griddle over medium heat and cook the poli on both sides until golden brown, applying ghee as needed.
