Heat butter in a large pot over medium heat.

Add chopped onions and minced garlic. Saute until onions turn translucent.

Add chopped tomatoes and cook until they turn soft.

Add vegetable stock, salt, and black pepper. Bring it to a boil.

Simmer for about 15-20 minutes, allowing the flavors to blend.

Remove the pot from heat and let it cool slightly.

Using an immersion blender or regular blender, puree the soup until smooth.

Return the soup to the pot and reheat if needed.

Stir in chopped basil leaves and cook for an additional 2 minutes.
