Crispy and flavorful South Indian deep-fried snack made with lentils.

Preparation

Drain the soaked Bengal gram and grind it coarsely in a food processor or mixer grinder.

In a mixing bowl, combine the ground Bengal gram, chopped onion, green chilies, grated ginger, chopped curry leaves, chopped coriander leaves, rice flour, and salt. Mix well to form a thick batter.

Heat oil for deep frying in a kadai or deep pan.

Take a small portion of the batter and shape it into a flat disc using your palms. Make a hole in the center of the disc (optional).

Carefully slide the shaped vadas into the hot oil and deep fry on medium heat until golden brown and crispy. Flip the vadas occasionally for even frying.

Once the vadas are cooked, remove them from the oil and drain on kitchen paper towels to remove excess oil.

Serve hot with coconut chutney or tomato ketchup.
