Gobi Paratha is a delicious Indian stuffed bread made with whole wheat flour and a spiced cauliflower filling.

Preparation

In a mixing bowl, combine the whole wheat flour, salt, and water to make the dough.

Knead the dough well until it becomes smooth and elastic. Cover it with a damp cloth and set aside for 15-20 minutes.

Heat oil in a pan and add the grated cauliflower, green chili, ginger, and salt. Saute for a few minutes until the cauliflower is cooked and turns soft.

Add the red chili powder, turmeric powder, garam masala, and chopped coriander leaves. Mix well and cook for another 2-3 minutes. Turn off the heat and let the filling cool down.

Divide the dough into equal-sized portions and roll each portion into a small circle.

Place a spoonful of the cauliflower filling in the center of each circle and fold the edges to seal it completely. Roll it out into a paratha.

Heat a tawa or griddle and cook each paratha on both sides with a little oil until golden brown spots appear. Repeat the process for all the parathas.

Serve hot Gobi Parathas with yogurt, pickle, or chutney.
