Preparation

Heat oil in a pot or saucepan.

Add the grated ginger, minced garlic, and chopped green chilies. Sauté for a minute.

Add the julienne-cut carrots and capsicum, and shredded cabbage. Stir-fry for 2-3 minutes.

Pour in the vegetable broth, soy sauce, vinegar, black pepper powder, and salt. Mix well.

Let the soup come to a boil. Reduce the heat and simmer for 5-7 minutes.

Stir in the corn starch mixture gradually while stirring continuously. Simmer for another 2 minutes until the soup thickens slightly.

Add the chopped spring onions and cook for another minute.
