Kashmiri roti

A traditional flatbread recipe from the beautiful Kashmiri cuisine.

Preparation

In a large mixing bowl, combine the whole wheat flour, clarified butter (ghee), and salt.

Slowly add water and knead the mixture to form a smooth and soft dough.

Cover the dough and let it rest for about 20 minutes.

Divide the dough into small equal-sized balls.

Take each ball and roll it out into a small round disc, approximately 6-8 inches in diameter.

Heat a tawa or a flat pan over medium heat.

Place the rolled roti on the hot tawa and cook for a minute.

Flip the roti and cook the other side for another minute.

Apply some ghee on both sides of the roti and cook until light golden brown spots appear.

Repeat the process with the remaining dough balls.

Serve the Kashmiri rotis warm with your favorite curry or side dish.
