Lacha paratha

Flaky and layered Indian bread made from whole wheat flour

Preparation

In a large mixing bowl, combine whole wheat flour, salt, and 2 tablespoons of ghee or oil. Mix well.

Gradually add water to the flour mixture and knead to form a soft and smooth dough. Let it rest for 15 minutes.

Divide the dough into small lemon-sized balls. Roll each ball into a thin circle.

Spread some ghee or oil on the rolled circle. Sprinkle a little dry flour on top.

Cut the circle into thin, long strips using a knife or pizza cutter.

Gather the strips and roll them into a tight spiral, like a cinnamon roll. Press the top to flatten it slightly.

Sprinkle some dry flour on the rolling surface and roll the spiral into a round paratha.

Heat a tawa or griddle over medium heat. Place the rolled paratha on the hot tawa.

Cook one side until small bubbles appear. Flip the paratha and cook the other side.

Brush some ghee or oil on both sides while cooking to make the paratha crispy.

Remove the paratha from the tawa and repeat the process with the remaining dough balls.
