Preparation

Heat oil in a pan and add cumin seeds. Let them splutter.

Add the chopped onion and sauté until it becomes translucent.

Add minced garlic, grated ginger, and green chili. Sauté for another minute.

Add chopped tomatoes and cook until they turn mushy.

Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

Add chopped spinach (palak) and boiled corn kernels. Mix everything together.

Cover the pan and cook for about 5-7 minutes on medium heat, or until the spinach wilts completely.

Add water and mix well. Simmer for another 2-3 minutes.

Turn off the heat and let the mixture cool down slightly.

Transfer the mixture to a blender or food processor and blend until smooth.

Pour the blended mixture back into the pan and add garam masala powder. Mix well.

Add fresh cream (optional) and cook for another 2-3 minutes.
