Preparation

Heat coconut oil in a pan over medium heat.

Add the chopped onions and sauté until they turn translucent.

Add the grated ginger, minced garlic, slit green chilies, and curry leaves. Sauté for a minute.

Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.

Add the chopped tomatoes and cook until they become soft and mushy.

Add the cleaned and deveined prawns to the pan. Cook for about 2 minutes.

Pour in the coconut milk and mix well. Season with salt according to taste.

Cover the pan and simmer for 5-7 minutes or until the prawns are cooked through and the curry thickens.

Garnish with freshly chopped coriander leaves.
