A popular South Indian deep-fried snack made with a spicy potato filling.

Preparation

In a mixing bowl, combine the mashed potatoes, chopped onion, green chili, grated ginger, chopped curry leaves, chopped coriander leaves, salt, turmeric powder, and asafoetida.

Mix well to form a smooth mixture.

In a separate bowl, mix the gram flour, rice flour, baking soda, and salt.

Gradually add water and make a thick batter.

Heat oil in a deep pan or kadai for deep frying.

Take a portion of the potato mixture and shape it into a ball.

Dip the ball into the prepared batter and coat it evenly.

Carefully drop the coated ball into the hot oil.

Fry on medium heat until the bonda turns golden brown and crisp.

Remove the bonda from the oil and drain excess oil on a paper towel.

Serve hot with chutney or sauce.
