A creamy Indian rice pudding flavored with saffron

Preparation

Rinse the soaked rice and grind it to a coarse paste.

In a large saucepan, bring the milk to a boil.

Add the ground rice paste and cook on medium heat, stirring continuously to avoid lumps.

Cook until the rice is cooked and the mixture thickens.

Add sugar, saffron milk, and cardamom powder. Mix well.

Continue to cook for another 5-6 minutes until the sugar is dissolved and the mixture thickens to a custard-like consistency.

Remove from heat and let it cool slightly.

Add rose water and mix well.

Pour the phirni into serving bowls or clay pots.

Garnish with sliced almonds and pistachios.

Refrigerate for at least 2 hours before serving.
