Preparation

In a mixing bowl, combine all-purpose flour, baking powder, salt, sugar, yogurt, and oil. Mix well.

Gradually add water and knead to form a soft and smooth dough. Cover and let it rest for 30 minutes.

In a separate bowl, combine mashed potatoes, chopped onion, green chili, cilantro, grated ginger, garam masala, red chili powder, coriander powder, cumin powder, amchur powder, and salt. Mix well to make the stuffing.

Divide the dough into equal-sized portions and roll each portion into a small circle.

Place a portion of the potato stuffing in the center of each dough circle. Fold the edges over the stuffing and seal the dough to make a ball.

Gently flatten each ball with your hands and roll it into a kulcha (slightly thicker than a regular roti or bread).

Heat a griddle or tawa over medium heat. Place the rolled kulcha on the hot griddle.

Cook until bubbles start to appear on the surface, then flip and cook the other side.

Apply butter or ghee on both sides of the kulcha and cook until golden brown spots appear.

Remove from heat and serve hot with chole or any curry of your choice.
