Preparation

1
In a mixing bowl, combine all-purpose flour, sugar, salt, and instant yeast.

2
Add melted butter and yogurt to the bowl and mix well.

3
Gradually add warm milk and knead the dough until it becomes smooth and elastic.

4
Cover the dough with a cloth and let it rest in a warm place for about 2 hours or until it doubles in size.

5
After the resting period, punch down the dough and divide it into equal-sized balls.

6
Roll each ball into a circular shape of about 1/4 inch thickness.

7
Sprinkle nigella seeds on top if desired and press them gently into the dough.

8
Heat a skillet or tawa over medium heat and place the rolled kulcha on it.

9
Cook for about 1-2 minutes or until small bubbles appear on the surface.

10
Flip the kulcha and cook for another 1-2 minutes until it puffs up and is golden brown.

11
Remove from heat and brush the kulcha with melted butter.

12
Repeat the process with the remaining dough balls.

13
Serve hot with your favorite curry or as a snack.
