Preparation

Heat oil in a pan or kadhai over medium heat.

Add cumin seeds and let them splutter.

Add grated ginger, minced garlic, and slit green chili. Sauté for a minute.

Add chopped onions and cook until they turn translucent.

Add tomato puree and cook until the oil separates.

Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

Add the cubed potatoes and cauliflower florets. Mix well to coat them with the masala.

Cover the pan and cook on low heat for about 10 minutes or until the vegetables are partially cooked.

Add green peas and garam masala. Mix well and cook for another 5 minutes or until all the vegetables are cooked through.

Garnish with fresh coriander leaves.
