Preparation

In a large mixing bowl, combine all-purpose flour, sugar, baking powder, cardamom powder, and salt.

Add melted ghee, saffron-infused milk, yogurt, and lukewarm milk to the dry ingredients.

Knead the mixture into a soft and smooth dough. If needed, add more milk or flour to adjust the consistency.

Cover the dough and let it rest for about 1-2 hours until it doubles in size.

Preheat the oven to 200°C (400°F).

Divide the dough into small portions and shape them into round balls.

Roll each ball into a circular shape, about 1/4-inch thick, using a rolling pin.

Place the rolled sheermal roti on a greased baking sheet or a baking tray lined with parchment paper.

Bake the sheermal roti in the preheated oven for about 5-7 minutes or until it puffs up and gets golden brown spots.

Remove from the oven and brush the hot rotis with a little bit of melted ghee for a glossy finish.
