Preparation

Heat oil in a pan or kadai.

Add the broken dry red chilies and curry leaves. Sauté for a few seconds until fragrant.

Add the chopped onions and sauté until they turn golden brown.

Add the minced garlic and grated ginger. Sauté for a minute until the raw smell goes away.

Add the chicken pieces to the pan and mix well. Cook for about 5 minutes on medium heat.

Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well to coat the chicken with the spices.

Cover the pan and cook for about 15-20 minutes on low heat, stirring occasionally, until the chicken is cooked through and tender.

Garnish with fresh coriander leaves.
