Preparation

In a mixing bowl, combine the whole wheat flour, all-purpose flour, and salt.

Add oil or ghee to the flour mixture and mix well.

Gradually add water and knead to form a soft and pliable dough.

Cover the dough with a damp cloth and let it rest for about 30 minutes.

Divide the dough into small lemon-sized balls and roll each ball between your palms to make it smooth.

Dust the rolling surface with flour and roll out each ball into a very thin, round roti.

Heat a tawa or griddle over medium heat and cook each roti on both sides until light brown spots appear.

Apply a little oil or ghee on one side of each roti and fold it into a triangular shape or pleat it like a handkerchief.
