A popular street food dish from Mumbai, consisting of a potato vada served in a pav bun.

Preparation

In a pan, heat oil and add mustard seeds. Once they crackle, add curry leaves, ginger, garlic, and green chilies. Saute for a minute.

Add mashed potatoes, salt, and turmeric powder. Mix well and cook for 2-3 minutes. Remove from heat and let it cool.

In a mixing bowl, add besan, red chili powder, baking soda, and salt. Gradually add water and whisk to make a smooth batter.

Heat oil in a deep pan for frying. Take small portions of potato mixture and shape them into round vadas. Dip each vada into the batter and fry on medium heat until golden and crisp. Drain on a paper towel.

Toast the pav buns on a tawa with a little butter until lightly crisp and golden.

To assemble the vada pav, spread green chutney on one side of the pav and tamarind chutney on the other side.

Place a vada in between the pav buns. Garnish with chopped onions and coriander leaves. Serve hot.
