Preparation

1. In a large mixing bowl, combine the ground meat, chopped onion, ginger paste, garlic paste, green chili, fresh cilantro, fresh mint leaves, garam masala powder, red chili powder, cumin powder, coriander powder, and salt. Mix well to combine all the ingredients.

2. Once the mixture is well combined, cover it and let it marinate in the refrigerator for at least 1-2 hours to allow the flavors to meld together.

3. Preheat your grill or grill pan to medium-high heat. While the grill is heating, divide the meat mixture into equal portions and shape them into long cylindrical kebabs around metal or bamboo skewers.

4. Brush the kebabs with vegetable oil to prevent sticking and place them on the grill. Cook for about 10-12 minutes, turning occasionally, until the kebabs are cooked through and have a nice browned exterior.

5. Once cooked, remove the kebabs from the grill and let them rest for a few minutes. Serve hot with mint chutney or yogurt dip.
