Preparation

In a mixing bowl, combine the all-purpose flour, yogurt, garlic, salt, sugar, baking powder, and butter or ghee. Mix well to form a soft dough.

Knead the dough for about 5 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.

Divide the dough into small equal-sized balls. Roll each ball into a small circle or oval shape.

Sprinkle some finely chopped coriander leaves on one side of the rolled dough and press them gently.

Heat a tawa or skillet over medium heat. Place the rolled dough with the coriander side on top of the tawa.

Cook the kulcha for about a minute until bubbles start to appear on the surface. Flip it over and cook the other side until golden brown spots appear.

Brush the cooked kulcha with a little butter or ghee and serve hot.

Repeat the process for the remaining dough balls.

Garlic kulcha is ready to be served as a side dish with curries or enjoyed on its own.
