Preparation

Heat oil in a large pan or kadai.

Add onions and sauté until they turn translucent.

Add ginger-garlic paste and sauté for a minute.

Add chopped tomatoes and cook until they become soft.

Add green bell pepper, boiled green peas, boiled cauliflower, and boiled carrot. Mix well.

Add boiled and mashed potatoes, pav bhaji masala, red chili powder, turmeric powder, and salt. Mix everything together.

Cook the mixture on low flame for 10-12 minutes, mashing it continuously with a potato masher.

Adjust salt and spices according to your taste.

Heat a tawa or griddle. Slice each pav horizontally and lightly toast them with a little butter on the tawa.

Serve the hot pav bhaji with the toasted pav, topped with a dollop of butter and garnished with chopped coriander leaves.
