Preparation

Heat oil in a pan or kadai.

Add cumin seeds and let them splutter.

Add chopped onions and sauté until golden brown.

Add ginger, garlic, and green chili. Sauté for a minute.

Add chopped tomatoes and cook until they turn mushy.

Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.

Add washed baby potatoes and salt. Stir to coat the potatoes with the spices.

Add water, cover the pan, and cook until the potatoes are tender.

Uncover the pan and cook for a few more minutes to thicken the curry.
