A tangy and creamy yogurt-based curry from the state of Gujarat.

Preparation

In a bowl, whisk the yogurt until smooth.

Add besan (gram flour) and whisk again until no lumps remain.

Add water gradually, whisking continuously to make a smooth batter.

Heat oil or ghee in a large saucepan over medium heat.

Add cumin seeds, mustard seeds, curry leaves, and asafoetida. Let them crackle.

Add chopped ginger and green chilies. Saute for a minute.

Reduce the heat to low and add the yogurt-besan mixture to the saucepan.

Stir continuously, making sure the mixture doesn't stick to the bottom.

Add turmeric powder, salt, and sugar. Mix well.

Let the kadhi simmer on low heat for about 15-20 minutes, stirring occasionally.

Garnish with cilantro leaves and serve hot with steamed rice or khichdi.
