Preparation

In a mixing bowl, combine all-purpose flour, yogurt, and a few saffron strands (optional). Mix well.

Add water gradually and mix to form a smooth and thick batter. Cover the batter and allow it to ferment for 8-10 hours or overnight.

After fermentation, add baking powder to the batter and mix well.

In a separate pan, prepare the sugar syrup by heating 2 cups of sugar with 1 cup of water. Add cardamom powder and a few saffron strands (optional). Cook until the sugar dissolves completely and the syrup thickens slightly. Keep the syrup warm.

Heat ghee or vegetable oil in a deep frying pan or kadai over medium heat.

Take a Jalebi cloth or piping bag with a nozzle. Fill it with the fermented batter.

Pipe the batter in a spiral shape into the hot oil. Fry until the jalebi turns golden and crispy. Remove from the oil and drain excess oil.

Dip the fried jalebi into the warm sugar syrup. Allow it to soak for a few seconds, then remove and transfer to a serving plate.

Garnish with chopped pistachios or almonds, if desired.

Serve the delicious jalebi warm or at room temperature.
