Preparation

In a mixing bowl, combine the all-purpose flour, curd, baking powder, baking soda, melted ghee, and salt. Mix well.

Add water gradually and knead to form a soft dough. Cover the dough and let it rest for 1 hour.

Meanwhile, prepare the paneer filling. In a bowl, mix grated paneer, chopped onion, green chili, cilantro leaves, red chili powder, garam masala, turmeric powder, and salt. Mix well.

Divide the dough into equal-sized balls and flatten each ball slightly.

Take a portion of the paneer filling and place it in the center of a flattened dough ball. Close the edges and seal the dough, ensuring the filling is completely enclosed.

Roll out the stuffed dough ball into a round kulcha, approximately ΒΌ inch thick.

Heat a tawa or griddle on medium heat. Place the rolled kulcha on the hot tawa.

Cook the kulcha on one side until bubbles start appearing and then flip it over to cook the other side.

Apply oil on both sides and cook until golden brown spots appear on the kulcha.

Remove from heat and repeat the process with the remaining dough and filling.

Serve the paneer kulcha hot with yogurt, pickle, or chutney.
