Preparation

Heat oil in a pan or kadai over medium heat.

Add the chopped onion and sauté until golden brown.

Add the grated ginger and minced garlic. Sauté for another minute.

Add the chopped tomatoes and cook until they turn soft and mushy.

Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well.

Add the chopped okra and slit green chilies. Stir to combine.

Cover the pan and cook on low heat for about 10-15 minutes, stirring occasionally.

Once the okra is tender and cooked, sprinkle garam masala and mix gently.

Garnish with freshly chopped cilantro leaves.
