Preparation

Heat oil in a large pan or kadai over medium heat.

Add onions, ginger, garlic, and green chilies. Saute until onions turn golden brown.

Add tomatoes and cook until they turn mushy.

Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well.

Add the chicken pieces and mix until they are well-coated with the masala.

Cover the pan and cook for about 10 minutes, stirring occasionally.

Add water, cover again, and cook until the chicken is cooked through and tender. This may take around 20-25 minutes.

Garnish with curry leaves and serve hot with rice or roti.
