Sabudana Khichadi

A popular Indian dish made with tapioca pearls, peanuts, and potatoes.

Preparation

Wash the tapioca pearls (sabudana) thoroughly and soak them in water for at least 4-5 hours or overnight. Drain the water completely.

Heat ghee or oil in a pan or kadai.

Add cumin seeds and curry leaves. Saute for a few seconds.

Add the chopped green chilies and saute for a minute.

Add the diced potatoes and cook until they are soft and slightly browned.

Add the soaked tapioca pearls and mix well. Cook for 5-6 minutes on medium heat, stirring occasionally.

Add the roasted and crushed peanuts, sugar, and salt. Mix well.

Cover the pan with a lid and cook for another 5 minutes, stirring occasionally.

Remove from heat and add lemon juice. Mix well.

Garnish with chopped cilantro and serve hot.
