Deep-fried fritters made with a mix of assorted vegetables.

Preparation

In a large mixing bowl, add the gram flour (besan), red chili powder, turmeric powder, cumin powder, grated ginger, chopped green chili, chopped coriander leaves, and salt. Mix well.

Add the diced potatoes, chopped onion, cauliflower florets, and chopped spinach to the bowl. Mix everything together until the vegetables are well coated with the gram flour mixture.

Gradually add water to the mixture while mixing, until a thick batter is formed. The batter should be thick enough to coat the vegetables, but not too runny.

Heat oil in a deep frying pan or kadai over medium heat.

Drop small portions of the batter into the hot oil using a spoon. Fry the pakodas in batches until golden brown and crispy.

Remove the fried pakodas from the oil and place them on a paper towel to remove excess oil.

Serve the mixed veg pakodas hot with mint chutney or tomato ketchup.
