Preparation

Heat oil in a kadai or a deep pan.

Add sliced onions and sauté until they turn translucent.

Add grated ginger and minced garlic, and sauté for another minute.

Now add chopped tomatoes and sauté until they become soft and pulpy.

Add slit green chilies, turmeric powder, red chili powder, coriander powder, and kadai masala. Mix well.

Add sliced mushrooms and sliced bell peppers. Mix everything together.

Cover and cook on medium heat for about 10 minutes or until the mushrooms are cooked through.

Add garam masala and crushed kasuri methi. Mix well.

Garnish with freshly chopped coriander leaves.

Serve hot with roti, naan, or rice.
