Preparation

1. Drain the soaked urad dal completely and grind it to a smooth paste using a grinder or blender.

2. Transfer the ground dal to a bowl and add chopped green chilies, grated ginger, finely chopped curry leaves, finely chopped onions, and salt. Mix well.

3. Heat oil in a deep pan or kadhai for deep-frying.

4. Wet your hand with water and take a small portion of the batter. Shape it into a round ball and press it between your palms to flatten it slightly. Make a small hole in the center of the vada.

5. Gently slide the shaped vada into the hot oil and deep-fry on medium heat until golden brown and crispy.

6. Remove the fried vada from the oil and drain on a kitchen towel to remove excess oil.

7. Serve hot with chutney or sambar.
