Preparation

Heat oil in a large pot over medium heat.

Add chopped onions and sauté until they turn golden brown.

Add minced garlic and grated ginger. Cook for another minute.

Add chopped tomatoes and cook until they become soft.

Add turmeric powder, cumin powder, coriander powder, and red chili powder. Mix well.

Add red lentils and vegetable broth. Bring to a boil.

Reduce the heat and simmer for about 20 minutes or until the lentils are cooked and tender.
