Chicken rogan josh

A delicious and aromatic chicken curry from the Kashmiri cuisine.

Preparation

Heat oil or ghee in a large pan over medium heat.

Add chopped onions and cook until golden brown.

Add ginger-garlic paste and sauté for a minute.

Add chicken pieces and cook until they are browned on all sides.

Add tomato puree, red chili powder, turmeric powder, ground fennel, ground ginger, ground cinnamon, ground cardamom, ground cloves, and salt. Mix well to coat the chicken.

Reduce heat to low, cover the pan, and let the chicken cook for about 20 minutes or until tender. Stir occasionally to avoid sticking to the bottom of the pan.

Once the chicken is cooked, add whisked yogurt and mix well. Cook for an additional 5 minutes.

Garnish with fresh coriander leaves.
